Cheese Expert Joins List of Schnucks Food Gurus

ST. LOUIS – Charles “Charlie” Scotino has joined Schnuck Markets, Inc. as a resident cheese expert reporting to Director of Deli and Prepared Foods Melissa Bunch.


Scotino has more than 30 years of food and hospitality experience and has spent half that time studying cheese.  Prior to joining Schnucks, he served as director of purchasing and new product development for Swiss American for 16 years.  Responsible for new product development, Scotino worked directly with Wisconsin cheese makers on creating new brands.


“I learn something new everyday in the cheese business, and I’m eager to share that knowledge with Schnucks customers and teammates.  In their efforts to create spectacular food experiences for customers, Schnucks has made a real commitment to cheese starting with specialty cheese shops and moving on to the aged cheese room at the Des Peres Schnucks location, a veritable playground for cheese enthusiasts,” Scotino said.


“My goal is to make Schnucks a destination for cheese by bringing Schnucks customers the finest and highest quality cheeses along with the information they need to make the most of the different flavors and textures,” Scotino said.  “I also want to help train our teammates so they are confident in answering questions and make cheese suggestions to customers whether they are creating a sandwich, a party tray or looking for that special cheese pairing for a nice wine or specialty beer.”


Scotino has a fondness for sharp cheddars but an appreciation for all varieties.  “Cheese making is both a simple and complex process,” he said.  “You start with good quality milk and then you move into the science of it.  A cheese maker takes everything into consideration and, through his or her passion, turns it into a finished piece of cheese.  The more you know about cheese making, the more interested you will be in trying different types.”


Scotino is from St. Louis and currently lives in St. Louis.  Schnucks now offers specialty cheese shops in 15 stores, and Scotino expects that number to grow as new stores are built and established stores are remodeled.
